Yuzu Meringue
Ingredients
For the cocktail :
For the bergamot siphon foam:
- 30 ml MONIN Yuzu fruit mix
- 20 ml Pure by MONIN Lemon Lime
- 40 ml vodka
For the bergamot siphon foam:
- 40 ml MONIN Bergamot syrup
- 40 ml lemon juice
- 4 egg whites
Garnish
Bergamot siphon foam. Lemon zest.
Capacity
270 ml
Instructions
- Pour all cocktail ingredients into a shaker filled with ice
- Shake, then pour into a Margarita glass
- Pour all bergamot foam ingredients into a siphon
- Lay the foam on top of the drink
- Toast surface with a blowtorch
- Garnish with lemon zest
- Serve
